Curried Chicken thigh traybake w garlic yoghurt 

Bring a little bit of Indian spice to an easy week night dinner, that has all the goodness for your health & wellness.

Serves: 4

Ingredients:

Large pack chicken thighs

Red pepper

Yellow pepper

Courgette

Tub cherry tomatoes

Small bag of kale

Red onion

2 x large carrots

Tsp curry powder

Tsp cumin seeds

Tsp coriander seeds

Salt & pepper

Cup of Greek yoghurt

2 taps garlic granules

Olive oil

Squeeze of lemon

Method:

1: Chop up all the vegetables into decent sized chunks

2: Place in oven dish & mix with the cumin & coriander seeds, a good slug of olive oil, season with salt & pepper

3: Rub the chicken thighs with the curry powder, olive oil, salt & pepper pop ontop of veg & cook in an oven at 180 degrees for approx 35-45 minutes

5: Mix the yogurt, garlic granules & lemon in a bowl.

6: Once cooked, serve up the veg, topped with the chicken & a good drizzle of the yoghurt over the top.
