Herby Chicken with Med Veg & Houmous

Bring a little bit of colour & goodness to your plate, with this delicious dinner.

Serves: 2

Ingredients;

Chicken Thighs x 4

Medium Courgette

1 Red Pepper

1/2 Red Onion

10 Cherry Tonatoes

4 Cloves Garlic

Sprinkle Dried Herbs

Can of Chickpeas

2 tbsp tahini

Lemon

Olive oil

Salt & Pepper

Instructions:

1: Dive up the onion, courgette, pepper & tomatoes. Drizzle with olive oil, salt, pepper, dried herbs & crushed two of the garlic cloves and mix all together.

2: place all vegetables in an unroof dish and cook at 1:80 for approximately 30 minutes.

3: the chicken thighs with olive oil oil, dried herbs, seasoned with & pepper, put in the air fryer for 15-20 minutes.

4: drag the can of chickpeas & put them in the blender with a good drizzle of olive oil, tahini, garlic garlic cloves & a good squeeze of lemon. Blitz until smooth, adding more olive oil if necessary.

5: Give the vegetables a good shake & Once cooked start plate up.

6: put the chicken thigh on top of the vegetables & and good dollop humus on the side.
